The Opinel against the gadget knife.

This is the rare ledger with no tension. The durable knife is also the cheapest knife. An Opinel costs less than the gimmick blade beside it on the shelf, and it outlives it by decades.

Buy it once. Sharpen it on a stone. The carbon steel takes an edge easily and holds it. A stone costs fifteen to thirty euros and lasts a lifetime, so the cost per use falls toward nothing. The gadget knife dulls, and a stamped gadget blade cannot be brought back to sharp. It goes in a drawer, then in the bin.

There is no resale story here and no need for one. The point is the opposite of premium. The cheapest thing in the category is the one you never replace.

An Opinel costs less than a sandwich. It has been made the same way since 1890, and a sharpening stone keeps it cutting for fifty years.

The Opinel No.8 is a folding knife with a carbon steel blade and a beech handle. It locks with the Virobloc ring, a twist collar patented in 1955. It started as a cheap knife for French farmers, shepherds and railway workers, and it became an icon of French culture without changing much. Generations sharpened these blades on the edge of a stone doorstep. It carries a lifetime guarantee against material and manufacturing defects.

€8,85 to €21, depending on the shop. The gadget knife next to it, all thumb studs and tactical coating, costs eighteen to twenty-two euros. The Opinel is cheaper and it lasts longer. Carbon steel sharpens easily and takes a fierce edge, and you can keep it sharp forever with a single stone. A stamped gadget blade dulls and stays dull. You replace it. Be honest about the trade. Carbon steel rusts if you put it away wet. That is the cost of how easily it sharpens. Keep it dry, wipe it, oil it now and then, and it darkens into a grey patina that protects the steel. If you want less upkeep, the stainless Inox version asks nothing and gives up a little of that easy, screaming edge. The locking ring can be stiff at first. None of this is a flaw. It is a knife that expects a small ritual and pays it back for decades.
